PF CHANG’S DYNAMITE SHRIMP 💣🍤

Trying to recreate the famous dynamite shrimp! Crispy tempura battered prawns, lathered in a sweet and spicy sriracha mayo.

This is the third in our series of restaurant recreations. This is one recipe that can convert anyone who isn’t a fan of shrimp/prawns.

Yield: 2 Portions
Prep time: 10 mins
Cook time: 5 mins

1 tbsp Dark Soy
20 Shrimp (prawns)
100g Plain Flour
150ml Cold water
1 egg
150g Cornflour
Cooking oil

Sauce:
4tbsp Mayo
4tbsp Sriracha
1tbsp Sweet Chilli
1/2 tsp Cayenne pepper

Garnish:
Lettuce/Cabbage
Spring onions/chives

1. Marinade shrimp in dark soy and leave aside.
2. In a bowl combine flour, water and egg. Mix till tempura batter is formed.
3. Place a plate full of cornflour aside next to batter.
4. Dip marinated shrimp into cornflour, then into the batter, and then back into the cornflour.
5. Fry coated shrimps in oil till crispy (1-2 mins).
6. In a bowl combine mayo, sriracha, sweet chilli and cayenne pepper.
7. Once shrimp are fried, remove from oil and add straight to sauce mixture. Combine well.
8. Serve on a bed of lettuce/cabbage and garnish.
9. Enjoy 🙂
